Preparation
The freshly harvested corn kernel is removed from the cob and dried, by roasting, on the stove or in the oven. After it is roasted, it is ground and a flour with a special smell and taste is obtained. The polenta prepared from "roasted cornmeal" can be eaten with fasting or feasting dishes.
