Preparation
Sheet: 200 gr. butter, 100 gr. sugar, 3 egg yolks, 450 gr. flour, 2 tablespoons sour cream or milk, baking powder, a pinch of salt. From this dough 3 sheets are made.
Cream: of the 3 sheets, one is crushed and mixed with 150 ml. milk, 150 gr. powdered sugar, half a packet of butter at room temperature, 2 tablespoons cocoa, 2 tablespoons apricot jam, rum essence. The 3 egg whites are beaten with 200 gr. powdered sugar until the mousse becomes hard and glassy. The cream is spread between the two sheets, and the mousse is placed on top, over which the chocolate is grated.
