Preparation

300g elderberry flowers
1kg sugar
800 ml water
juice from 1 large or 2 small lemons
Boil a syrup of water with sugar, remove the flowers from the bunches, and when the syrup has reached the desired consistency add the washed flowers and boil for 20-30 minutes until the syrup binds (sample on the cold plate).
